Pumpkin Banana Bread (Healthy Quarantine Baking)

Hi Friends!


If you've been on social media this past month in quarantine, chances are you've seen an abundance of your friends and family making banana bread- because naturally what else is there to do?


Inspired by these creations and a variety of random ingredients in our cabinets, my mom and I decided to create a new healthy recipe for our repertoire.... Healthy Pumpkin Banana Bread.

Just like my other recipes, this is easily adaptable to what you have available during this trying time. In the recipe below, I've listed a few substitutions you can make for your convenience

and ultimate Banana bread Success!

INGREDIENTS



2 ripened bananas (mashed)

3/4 cup of canned pumpkin

2 cups oat flour

1 tsp baking powder

1/2 tsp baking soda

1-2 tsp cinnamon

1/3 cup plant based milk

1/4 cup of honey/maple syrup/or agave nectar *


additional add-ins:

**3/4 cup of chocolate chips (rec. semi sweet)

**1/2 cup chopped walnuts

**1/2 cup dried fruit


*   = use what you have available in your cabinets :) We used a mixture of honey & syrup for our filmed version of this recipe! 

** = optional ingredients to make your Healthy Banana Bread even more delicious!

Directions:

1. Preheat oven to 375°F.

2. Combine dry ingredients together in a small bowl.

3. Combine wet ingredients together in a separate bowl.

4. In the larger bowl slowly incorporate the dry ingredients until fully mixed in.

5. Fold in your chocolate chips and/or any other add-ins you'd like

(for extra crunch you may want to try walnuts)

6. Get out your greased loaf pan, and evenly pour the batter into it before putting in the oven for 40-45 minutes.

7. Bake until you can insert a toothpick in the center, and pull it out clean.

8. Cool for 30 minutes before serving or let cool completely before storing in the fridge for later.

This recipe uses no additional sugar other than the maple syrup/honey & what is naturally in the bananas-which is a big bonus! However, if you'd like to add a little sweeter taste you can lightly sprinkle [or heavily sprinkle-whatever floats your boat] some cinnamon sugar on top like we did in our Youtube recipe follow along! :)
